The wine opens with aromas of honeysuckle, lemon zest, and wood spice and the palate is made up of salted caramel, nuts, and stone fruit.
The Chardonnay grapes for the 'Copper Pot' are grown on cool-climate plots in Elgin, Ceres, and the Overberg. The Elgin site is rich in clay, with an easterly exposure, high altitude, and cooling ocean breezes. The Overberg and Ceres sites face west with shale soils, with Ceres benefiting from a notable diurnal shift and this shift in day to night temperatures ensures a balance of acidity and ripeness in the grapes.
A minimalistic approach is taken during vinification, with limited SO2 used. The grapes are picked early, and the timing is determined by the estate's desired style of subtlety and balance. Upon arrival at the winery, the grapes are whole bunch pressed, racked, and transferred to old oak barrels of various sizes. Fermentation begins naturally, and malolactic fermentation is carefully monitored. The wine is left for a few months before final blending and bottling.
