The first nose is creamy, intense, slightly floral. Its brightness evokes mandarin, orange blossom. Then, juicy aromas of black plum, mirabelle, blackcurrant, dried apricot and Nectarine compote mix with spicy notes of cumin, thyme, cardamon, and bay leaf. On the palate, after a broad and silky attack, yellow fruits and brioche notes reinforce the olfactory impression. Then, racy lemon accents (candied lemon, grapefruit, bergamot) weave a spectacular texture, richly layered and refreshing. Aromas of tarte tatin and walnuts, hints of pear and fennel amplify the saline freshness. Carried by incredible length, the finish is briny and slightly peppery.
Hors-Série White Pinot Noir is the new opus from Émilien Boutillat, the multi-awarded winemaker of Piper-Heidsieck. Weaving together their heritage and expertise, Émilien worked alongside renowned New Zealand winemaker Kevin Judd, to create a wine that reflects a unique synthesis of winemaking and viticulture from two sides of the world.
The Pinot Noir is vinified in a combination of stainless steel tanks(25%) and 10-year-old oak barrels (75%) for ten and six months, respectively. Following this, 75% of the must undergoes malolatic fermentation before it is all blended. Before it is bottled, the wine spends 19 months ageing on its lees.
