The nose opens with lime, lemon and grapefruit, followed by white peach and subtle spice. Hints of hazelnut, vanilla custard and lightly buttered toast add depth and complexity. The palate is vibrant and precise, with bright mineral notes and zesty acidity framed by subtle crème brûlée richness. Fresh and concentrated, it shows balance with nuanced oak and layered depth.
Patrick has sourced Chardonnay from vineyards across the Limestone Coast sub-regions of Mount Gambier, Coonawarra and Wrattonbully to create this blend. The vineyards lie within the world’s third largest volcanic plain and soils are composed of volcanic topsoil over limestone and basalt, resulting in a marked minerality in the wine.
The fruit was whole cluster crushed, pressed and drained off into tank for settling. Primary fermentation took place in barrique and tank with approximately 25% new oak used.
Patrick Sullivan makes single-vineyard Gippsland Chardonnay from ancient volcanic soils. The Halliday Guide describes him as “a top-tier exponent of the grape”, praising his “fine, classically styled, site-reflective wines made from the ground up with best-practice farming.”
