Light gold in colour with a fine, delicate mousse, this Blanc de Blancs has aromas of freshly squeezed lemon, pink lady apples, and white blossom which lead to alluring notes of shortbread and crème fraiche. On the palate, fresh orchard and citrus fruits are accompanied by an unmistakable minerality. The finish is long with a touch of salinity.

Fruit for Nyetimber’s Blanc de Blancs is sourced from Nyetimber’s own vineyards, each of which were selected for their south-facing aspect for optimal ripening conditions. These sites are also located in sheltered pockets of the South Downs, which offer protection from coastal winds. The vines are predominantly planted on chalk soils (65%) with the remainder on greensand soils (35%) and trained in VSP for excellent drainage and air flow. Grapes are harvested by hand and parcels picked individually at optimal ripeness.

The ‘Blanc de Blancs’ includes a small portion of barrel-fermented Chardonnay. Following secondary fermentation in bottle, the wine ages for around five years on its lees, followed by an additional 18 months under cork before release.

The Nyetimber estate, based in the heart of West Sussex, is widely regarded as an ideal site for sparkling wine production. First recorded in the 1086 Domesday Book, the estate has a lengthy history and was established as a vineyard in 1988, planting just over 14 hectares of Chardonnay, Pinot Noir and Pinot Meunier vines. The ever-increasing demand for Nyetimber’s sparkling wines led to considerable vineyard expansion from 2006 onwards. Today, Nyetimber comprises 11 carefully selected vineyards across Sussex, Hampshire, and Kent, with 425 hectares under vine.

The estate is owned by Dutchman Eric Heerema, who, alongside Head Winemaker Cherie Spriggs, has installed an impressive cellar. Cherie Spriggs has won the IWC ‘Sparkling Winemaker of the Year’ award twice, in 2018 and 2025, making her the first winemaker outside of Champagne and the first woman to achieve this coveted accolade. In 2025, their Blanc de Blancs was also awarded the ‘Champion Sparkling Wine Trophy’ by the IWC, becoming the first ever non-Champagne to do so.
