Pale lemon in colour. On the nose the wine displays bright aromas of lemon and grapefruit, with hints of apricot. The palate is well balanced with a vibrant acidity, a marked minerality and a refreshing finish.

Winemaker Didier Defaix's family owns 27 hectares of vineyard in Chablis, all of which are farmed organically. Like many producers, they lost their organic certification in 2016 due to the merciless weather but have since returned to organic farming. The Chablis comes from 12 hectares of vines, all planted on Kimmeridgian limestone soils, giving the wine the classic gunflint and wet stone aromas.

Upon arrival at the winery, the hand-harvested grapes underwent a gentle pressing to extract just the first press juice and to retain the delicate aromatics and flavours. A slow fermentation took place in stainless-steel tanks at a controlled temperature of 20°C with indigenous yeasts. The wine was kept on its fine lees for eight to twelve months to add texture and complexity. Vinification and ageing takes place entirely in stainless steel to preserve the freshness and signature Chablis minerality of the wine.

Les Hauts de Milly is owned and operated by husband-and-wife duo Didier Defaix and Hélène Jaeger-Defaix, whose vineyards in Rully and Chablis have been in their respective families for generations. Their winery and cellar are in the small village of Milly, on the left bank of the Serein.
