The Bourgogne Chardonnay has aromas of cut limes and grapefruit. These concentrated flavours of citrus fruit carry through to the palate, which is well-structured with fresh acidity.
The grapes for the Bourgogne Blanc are sourced from vineyards located in the Côte d’Auxerre, 15 kilometres south of Chablis, on clay and chalky soils. This results in a fresher, racier style of wine than Chardonnay from regions located further south in the Côte d'Or.
The grapes were harvested by hand. On arrival at the winery, they were gently pressed in order to retain the delicate aromatics. Fermentation took place in temperature-controlled, stainless-steel tanks at 20°C using natural yeasts. The wine went through 100% malolactic fermentation before it was aged for 10 months on fine lees in tank prior to bottling to enhance the wine’ structure.
Les Hauts de Milly is owned and operated by husband-and-wife duo Didier Defaix and Hélène Jaeger-Defaix, whose vineyards in Rully and Chablis have been in their respective families for generations. Their winery and cellar are in the small village of Milly, on the left bank of the Serein.
