The wine is pale lemon in colour with intense notes of citrus fruit, green pear and wild thyme underpinned by a saline minerality. The palate is bright with refreshing acidity and a long, savoury finish.

The grapes are sourced from a collection of vineyards in the Juncarejos area of south-west Valencia. Situated at around 600 metres above sea level, the vineyards benefit from calcareous soils that contribute freshness and mineral character. The vines are traditionally trained in goblet form, with meticulous vineyard management throughout the growing season, including green pruning, cluster thinning and certified organic treatments, to ensure healthy fruit and optimal ripeness.

The grapes are destemmed and gently pressed on arrival at the winery. After an initial settling, the must is racked and fermented separately in a range of neutral vessels before the final blend is assembled in a concrete tank prior to bottling.

Born and raised in the small village of La Font de la Figuera, south of Valencia, Javi Revert has been a driving force in revitalising the area's winemaking culture, working with its wealth of old vines and local varieties.
