The wine displays a bright ruby colour and expressive black cherry and raspberry fruit aromas on the nose, underlined by notes of black tea and spice. The palate is vibrant with fine-grained tannins, balanced by plush flavours of dark cherry laced with a lingering spice.
The grapes are sourced from multiple plots in the village of Gevrey-Chambertin, with vines averaging 60 years old. The principal sources are the plots 'Côte St Jacques' and 'Brochon', mainly from the climats of 'Jeunes Rois', 'Au Vellé' and 'En Champs'.
Upon arrival at the winery, the grapes were processed with 25% remaining as whole cluster. The remainder were destemmed before a four-day cold soaking on the skins to lend colour, texture, and greater complexity to the finished wine. During the 15-day fermentation, gentle pump-overs and pigeage were carried out daily to extract balanced tannins and concentrated fruit flavours. After fermentation the wine was matured for 12 months in oak, 10% of which was new.
Situated in the heart of Gevrey-Chambertin, Domaine Tortochot is run by fourth generation Chantal Michel-Tortochot who took over from her father Gabriel in the late 1990s. The domaine boasts 12 hectares of vines spread over 34 separate parcels. Unusually, her father encouraged Chantal to gain experience outside of wine, which resulted in business school and a career in finance before eventually completing her degree in winemaking in Dijon. She officially took over the domaine aged 35 years old and credits her forward-thinking approach to her unconventional path. Chantal immediately set about converting the estate from a supplier of top-quality fruit to négociant Joseph Drouhin back to the Tortochot family domaine. A few years later, she drove the conversion to organic viticulture and eventually achieved certification in 2013.
