The wine opens with a fragrant and inviting nose, displaying notes of crème de mure and raspberry alongside touch of sweet spices and vanilla. On the palate, the polished tannins provide structure without overwhelming the fruit. The finish is smooth and lingers with delicate perfume.

Sourced from four distinct plots totalling 1.88 hectares, situated in the foothills of the prestigious Corton hillside. These parcels—Les Boutières, Les Cras, Les Crapoussuets, and Les Petits-Vercots—are characterised by their clay-limestone soils, which provide excellent drainage while retaining sufficient moisture for optimal vine development. The vineyard's position exposes it to the influence of the cold corridor flowing from the Pernand-Vergelesses valley, creating a cooling effect that helps preserve acidity and extends the growing season. The vines, ranging from 30 to 60 years old, have developed deep root systems that access the mineral-rich subsoil.

The grapes were 100% destemmed using a gentle destemming machine designed to preserve berry integrity without crushing the fruit. The sorted grapes were then transferred into vats by gravity to maintain their delicate structure. Alcoholic fermentation took place over 15 days in cement and stainless steel tanks, allowing for precise temperature control and optimal extraction. After fermentation, the wine underwent 16 months of élevage in traditional 228-litre oak barrels, with 35% new oak providing subtle structure and complexity while preserving the wine's natural character.

Domaine Tollot-Beaut, in Chorey-lès-Beaune, was founded in 1880 by François Tollot and is now run by the family’s fifth generation, Nathalie Tollot and her two cousins, Olivier and Jean-Paul. Domaine Tollot-Beaut is famed for being among the first producers in the Côte d’Or to start domaine bottling in 1921.
