Pale lemon in colour. The nose shows delicate aromas of citrus zest and stone fruit, including peach, apricot and lemon, layered with mineral notes that will develop with time. The palate is medium-bodied, balancing a creamy texture with vibrant acidity, leading to a long finish.
Santorini forms part of the Cyclades island complex in the South Aegean Sea and sits atop an active underwater caldera. Its volcanic soils are predominantly composed of pumice, with varying proportions of lava and pyroclastic material. The island’s viticultural zone begins at sea level and rising to 250 meters above sea level in terraces. Santorini’s vine training systems are both ancient and unique, shaped by the island’s sandy soils, strong spring winds, intense summer sun and the timing of vine growth. The most emblematic system is the kouloura (also known as giristi), in which vine canes are woven into a basket-like shape to protect the grapes from wind and sun.
To the overall story of Assyrtiko there is a chapter before and another one since Paris Sigalas. He is the pioneering winemaker who applied mathematics and other innovative ideas to oenology and viticulture to elevate Santorini’s wines to international stardom. The 1991 Santorini is his maiden vintage, the first wine to be labelled Protected Designation of Origin, marking the start of operations at Domaine Sigalas.
