Pale lemon in colour with golden hues. The nose has intense aromas of lemon juice and cut grass with hints of wet stone. The palate is beautifully balanced with a creamy texture from the extended lees ageing, vibrant acidity and a lingering oyster-like saline finish.
Domaine Sautereau owns a quarter of the 5.5 hectares of the lieu-dit 'Le Vignoble des Sarrottes' in Crézancy. The fruit is sourced from 15 to 50 year old vines grown on “terres blanches” (white soils). This type of soil is composed of limestone and clay and is particularly rich in oyster shell fossils that give this single-vineyard Sancerre powerful aromas, beautiful minerality and a subtle saline character.
Upon arrival at the winery, the Sauvignon Blanc grapes were gently pressed. Fermentation temperatures were carefully controlled to preserve a pure, fruit-driven expression. Maturation took place in a combination of stainless steel tanks, amphorae, and concrete eggs, allowing each vessel to contribute to the wine’s texture and complexity. The wine was then aged on fine lees for approximately one year to build depth and structure before final blending.
The Sautereau family have produced wine in the village of Crézancy, seven kilometres southwest of Sancerre since 1683. Today, the winery is run by the family's tenth generation, David Sautereau, who makes modern, attractive wines that offer excellent value for money. His careful, orderly approach in his small, immaculate cellar is reflected in the purity of his wines which he describes as “sincere Sancerre”.
