Pale lemon in colour. On the nose aromas of lime and tropical fruits are married with a well integrated toastiness from the oak. Deliciously mouthwatering on the palate with a creamy texture from the lees ageing. As you would expect from this producer, the wine has a Côte d’Or sensibility and exceptional balance.
Lydie and François began to make Mâconnais wines in 2012 when their vines in the Côte d’Or were hit by hail. These wines were so successful, that they bought their first vineyards in the Mâconnais in 2015. The ‘Les Genièvres` lieu-dit is located to the north of the commune of Lugny at around 280 metres above sea level and with south-southeast exposure. There are some extremely old Chardonnay vines in this vineyard, planted in 1931 and producing tiny yields of fruit packed full of flavour. Soils are clay limestone and yields are on average 20 hectolitres per hectare. All of the fruit is hand harvested and the vineyards are farmed sustainably following ‘lutte raisonnée’ principles.
Upon arrival at the winery, the Chardonnay was gently whole-bunch pressed in a pneumatic press and the must was settled before being racked off to French oak barrels for fermentation. Following fermentation, the wine went through malolactic fermentation and was aged for 11 months in oak (25% new) with bâtonnage once per week.
Previously winemaker for Olivier Leflaive, Jean-Marc Boillot founded his eponymous domaine in 1985 after renting vines in Pommard and Volnay. In 1988, he inherited more vines in both appellations from his grandfather and two years later, a third of Domaine Etienne Sauzet, in Puligny-Montrachet, was left to him by his grandmother. This bequest of land is rare in Burgundy but explains why Domaine Jean-Marc Boillot has acquired such a respected reputation in just under four decades. Jean-Marc has since retired to the south of France, and the domaine is currently run by his daughter Lydie with her winemaker husband, François Alzingre.
