This elegant Bourgogne Blanc is medium lemon in colour, with vibrant aromas of citrus on the nose. Fresh, generous notes of candied pear and ripe peach on the palate are accompanied by a touch of white chocolate. The wine has lovely balance and wears its oak lightly, displaying a lovely grainy texture with excellent length.
The fruit for this wine is sourced from vineyards planted between 1991 and 2018 and located in the Côte d’Or, with 75% of the grapes coming from Puligny-Montrachet and 25% from Volnay. The vineyards are located 230 meters above sea level and are north-east facing, with soil composition of clay and limestone. This combination of factors contribute to the freshness and minerality of the wine.
The grapes were hand picked and transported to the winery, where they were whole bunch pressed ensuring lower levels of oxidation and contributing to creating a smoother mouth feel. The juice was then fermented in 350 litre oak barrels, 25% of which new oak. Malolactic fermentation took place and the wine aged on fine lees for 15 months in 30% new oak, adding body and complexity of aromas to the wine. Finally, the wine was filtered and bottled at the estate.
Previously winemaker for Olivier Leflaive, Jean-Marc Boillot founded his eponymous domaine in 1985 after renting vines in Pommard and Volnay. In 1988, he inherited more vines in both appellations from his grandfather and two years later, a third of Domaine Etienne Sauzet, in Puligny-Montrachet, was left to him by his grandmother. This bequest of land is rare in Burgundy but explains why Domaine Jean-Marc Boillot has acquired such a respected reputation in just under four decades. Jean-Marc has since retired to the south of France, and the domaine is currently run by his daughter Lydie with her winemaker husband, François Alzingre.
