Pale lemon in colour. This wine has intense aromas of citrus and green apple on the nose. On the palate there is a marked minerality and a crystalline acidity which carries the intense flavours onto the lingering finish.

The Perchaud vineyards are located around the village of Fleys. The steep, north to northwest facing vineyards have a surface area of 18 hectares and the soil is the typical Kimmeridgian soil of Chablis: chalky clay and some marl with the remnants of fossilized oysters from the Jurassic period. The double Guyot-trained vines are 25 years old on average. The vineyards are certified organic and farmed following sustainable methods without the use of pesticides or herbicides.

Upon arrival at the winery, the grapes were gently pressed in a Bucher pneumatic press and immediately separated from the skins. The must was fermented between in stainless-steel tanks followed by a few months on the lees, during which malolactic fermentation took place. The wine was then racked and aged in tank before being gently filtered and bottled.

Corinne Perchaud is married to fellow Chablis producer Jean-Pierre Grossot. The original domaine was established by Jean-Pierre’s grandfather in the 1920s, and in 1980 they bottled their first Chablis. Today, their youngest daughter, Eve Grossot, runs the estate and has taken over as winemaker from her father, in keeping with the family tradition.
