The slopes surrounding the village of Hunawihr, are some of the most celebrated in Alsace for grape-growing. Cave de Hunawihr’s fruit is sourced from 36 hectares of 25-year-old vineyards running along the south and south-east facing hillside slopes around the village, at an elevation of 250-320 metres. Located on a geological fault line across Ribeauvillé they have soils composed of granite, schist, limestone and chalky gravels.
Grapes were taken from selected small plots from the Hunawihr vineyards. Temperature-controlled fermentation took place between 16-18°C for three weeks, followed by four to six months on fine lees in stainless-steel tanks to settle before being filtered carefully. No malolactic fermentation was allowed to take place to preserve the purity of the fruit.
Cave de Hunawihr is a co-operative in Alsace, which was founded in 1954 in an attempt to re-establish winemaking in a territory that suffered greatly during World War Two. Today, Hunawihr has grown to 110 members and is equipped with a renovated winery and 200 hectares of vineyards, 80% of which are situated in Hunawihr and its surroundings, Riquewihr and Zellenberg. The Grand Cru holdings amount to 13 hectares and include Rosacker, Froehn, Sporen, Schoenenbourg and Osterberg.
