This wine is pale lemon in colour, with green hints. On the nose, notes of citrus and tropical fruits are complemented by aromas of fennel and quince. On the palate, the wine is round and mellow, with well-balanced acidity and a refreshing finish.

On arrival at the winery the grapes were pressed gently using a pneumatic press. Fermentation took place in stainless steel tanks, at controlled temperatures of 16°C over 18 days to retain the variety's crisp aromatics. The wine did not undergo malolactic fermentation or oak ageing to accentuate the wine's vibrant acidity and fresh fruit profile.

This Viura is sourced from vineyards in Toledo in Castilla-La Mancha at altitudes ranging between 600 and 800 metres above sea level. Here the large diurnal range helps to extend the growing season and retain high acidity in the grapes. The vines are VSP trained and planted on limestone soils, which results in vibrant and fresh fruit aromatics.

Bodegas Máximo was founded in 2002 to produce modern wines that offer exceptional value. They source their fruit from vineyards in Castilla y León and Castilla-La Mancha, planted at elevations ranging between 600 and 850 metres.
