The nose opens with ripe pineapple aromas, followed by notes of apple, pear, candied ginger and white freesia. Subtle undertones of almond and tangerine add further complexity. The palate shows generous weight and a rich texture, with excellent balance. The wine has good depth and a long, persistent finish.
A Mano vineyards are located between the historic towns of San Severo and San Paolo di Civitate in northern Puglia, on the border with Campania. The Falanghina vines grown here are over 20 years old. The vineyards sit at approximately 400 metres above sea level on soils composed of clay and limestone. The combination of canopy management, cooling altitude and mineral soils supports even ripening, allowing the fruit to reach full phenolic maturity and develop a characteristic golden-yellow colour alongside complete flavour development.
The grapes were pressed and fermented in temperature-controlled resin-lined concrete tanks for approximately 10 weeks. A small proportion of Falanghina grapes were dried until the end of October, after which they were pressed and the resulting juice was blended into the wine at the end of fermentation.
Mark Shannon and his partner Elvezia Sbalchiero, have revolutionised the style and calibre of Primitivo, turning it into one of Puglia’s most talked about grape varieties. They achieved this at A Mano in Salento by paying generous prices for the best possible grapes (sourced from 70 to 100-year-old vines) and focusing exclusively on quality while crafting a modern style. As the old saying goes, where you lead, others will follow.
