Fermentation in French Oak barrels of 225lt and 500lt, 10% of the barrels are new and the rest is of 2nd or 3rd use. The ''sur lies'' method is applicated for 6-8 months.
The vines are classified as old vines (since they were not destroyed during the Phylloxera epidemic), and are over 50 years in age. The vineyards are planted using the same technique from antiquity to the present day known as 'kataboladi'. This is the technique whereby when a vine dies, a branch from an adjacent vine is planted in the soil in its place, rather than planting a new vine on a rootstock. The vineyards of Santorini form one of the most historical viticulture regions in the world. The wine producing lineage of the island makes it part of the global historic legacy of grape cultivation.
To the overall story of Assyrtiko there is a chapter before and another one since Paris Sigalas. He is the pioneering winemaker who applied mathematics and other innovative ideas to oenology and viticulture to elevate Santorini’s wines to international stardom. The 1991 Santorini is his maiden vintage, the first wine to be labelled Protected Designation of Origin, marking the start of operations at Domaine Sigalas.
