An aromatic profile of blackberries, wild herbs, spice and earthy nuances. The palate is fresh and lively with black cherry, plum and forest fruits showcasing the natural vivacity of Listán Negro. Silky tannins provide gentle structure, leading to a persistent and elegant finish.
Produced from ungrafted (pie-franco) vines across northern Tenerife’s west-facing slopes around 200 metres above sea level. The vines are cultivated using the ‘rastra’ pruning method, where vines are trained low to the ground and stretch out across the soil. This method is ideally suited to Tenerife’s climate, helping protect grapes from high winds during the growing season. The ancient volcanic soils provide exceptional drainage and mineral complexity.
The grapes were harvested by hand and carefully transported in 18-kilogram boxes to preserve integrity of the fruit. In the cellar, 20% of the harvest underwent whole bunch fermentation in concrete tanks, while the remainder was destemmed. Fermentation occurred with indigenous yeasts over 15 days. Following gentle pressing, malolactic fermentation took place in Austrian oak vessels (1,500-litre foudres and 500-litre barrels), followed by 12 months ageing, softening tannins while preserving a pure expression of fruit.
Ocampo is the new Tenerife project from Jonatan García Lima, the winemaker behind two of the Canary Islands’ most respected estates: Bodegas Tamerán and Suertes del Marqués. Jonatan is a leading light and part of a new generation of Canarian winemakers preserving the islands’ rich heritage of ancient vineyards, indigenous varieties and traditional practices.
