A citrus fruit palate with bright acidity and creamy lees.
Fósil is a white mountain wine. It comes from vineyards cultivated in the Paraje Estancia within the IG San Pablo, at 1400 meters (4,593 ft) of elevation, and less than one kilometer (3,280 ft) away from the beginning of the Andes Mountains.
Selection of bunches. Filling of the concrete vessels by gravity. Fermentation with native yeasts in concrete vessels. 70% of the wine is aged in concrete while the remaining 30% is aged in used, untoasted 500 liter French oak barrels. Without malolactic fermentation.
Today, Sebastián, third generation of the family, finds himself leading a young team of agricultural engineers and enologists, who are in charge of producing the highest quality wines in the Uco Valley. On his initiative, the winery has had a research and development area since 2008, dedicated to studying the terroir and the diverse variables that affect wine quality. The goal, in Sebastián’s own words, is “not to strive for perfect wines, but wines that express the place, the region.”
