The Brut NV opens with a combination of green apple, freshly cut lemons and hints of cream and biscuits. On the palate the mousse is fine and textured with complex notes of apple compote, candied citrus peel and toasty notes. The finish is refreshing and long.

The NV wines are a composition of many vintages blended together. The journey of this wine started in 2009 where there was a reserved small amount of wine. Each year they harvest grapes and make wine, building up reserve wines. This allows the creation of a style consistent year on year and show a piece of Wiston history in every glass.

Wines have been grown on the soft chalk slopes of the South Downs around the Wiston Estate since Roman times, some 2,000 years ago.  The current winery was inspired Pip Goring’s arrival at the estate in 1972 and her dream to plant a vineyard that would evoke memories of her childhood in South Africa’s Western Cape. With the support of family and the perseverance of her Huguenot ancestors, Pip’s dream became a reality. In 2006, the Goring family planted a south-facing 16-acre site with Pinot Noir, Pinot Meunier and Chardonnay vines. In the same year, Harry and Pip’s son Richard moved back to the Estate with his wife, Kirsty. Having worked on small scale organic farms in western Canada, they brought with them the desire to invest for the long term in the soil and the community. Pip’s dream, which was as much about bringing people together as it was about making wine, has now become a reality and fifteen years after the vineyards were first planted the Wiston Estate’s team of growers and winemakers, which has doubled in size, has become a dynamic focal point for its ever-growing community.
