Black fruit aromas such as blueberries and blackberries followed by subtle herbal notes are found on the nose. The palate is round with firm and mature tannins that give structure to the wine. Fresh and elegant due to plentiful acidity. Long finish.
70% of the grapes are from Paraje Altamira and 30% from San Pablo. Fermented in concrete vats with native yeasts at 25-27 degrees Celsius. This is followed by maceration for 20-25 days and finally malolactic fermentation before being aged in concrete.
Today, Sebastián, third generation of the family, finds himself leading a young team of agricultural engineers and enologists, who are in charge of producing the highest quality wines in the Uco Valley. On his initiative, the winery has had a research and development area since 2008, dedicated to studying the terroir and the diverse variables that affect wine quality. The goal, in Sebastián’s own words, is “not to strive for perfect wines, but wines that express the place, the region.”
