Exultet shows beautiful aromas of linden blossom, acacia and wild thyme, followed by layers of exotic fruit, candied citrus and honey. Rich and beautifully textured, the palate is dense yet balanced, with a subtle mineral note. Long, harmonious and persistent, this is a wine with impressive ageing potential.
The name Exultet is inspired by the medieval liturgical parchments of Southern Italy, including the famous Exultet of Mirabella Eclano, which features a tribute to bees, a symbol of harmony and nature.The Fiano grapes come from 7 hectares of vineyards in Lapio, planted in 2004 at 600 metres above sea level with south-west exposure. The vines are trained using the Guyot system on a vertical trellis and grow on clay-calcareous soils enriched with volcanic lapilli stones, contributing to the wine's freshness, minerality, and aromatic complexity.
The grapes are gently whole-cluster pressed. Fermentation takes place in stainless steel tanks (70%) and new oak barrels (30%). The wine is then aged on its fine lees in stainless steel for 4–6 months, adding lovely texture and complexity.
Professor Luigi Moio is one of the world’s leading academics in the field of Oenology. His studies on the chemistry of wine aromatics have been widely published, and he served as president of the International Organisation of Vine and Wine (OIV) between 2021 and 2024. Luigi grew up in a winemaking family in Mondragone, just north of Naples. After his PHD, he spent time in Burgundy in the early nineties doing research into the aromatics of Pinot Noir. On his return, he was appointed Professor of Oenology at the University of Naples. While teaching, he also worked as a wine consultant to some of the best producers in Campania, but soon realised that his real calling was to make his own wines, with an uncompromising approach to quality
