It has lifted aromas of peaches and stone fruit with some citrus notes, which follow on to the palate. These sites receive perfect sun exposure, and production is contained to less than the potential yields, which ensures only the best quality grapes are selected. The red soils are comprised of calcerous clay making them rich in iron, minerals and nutrients. Almost 80% of the grapes come from old bush vines while the remainder come from trained vines that are at least 20 years old.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe grapes were gently pressed at very low temperatures to preserve the fresh quality of the fruit. The wines went through a cold pre-fermentation clarification before being fermented with selected yeasts in stainless steel.
