The soil is composed of \"Pliocene\" marine sediments rich in marine fossils and has alternating layers of clay and sand. The vines are approximately 55 years old and planted at a density of 2,200 vines per hectare. Half of the vines are spur pruned and cordon trained while the other half are Guyot trained. Yields are low at around 5,000 kilograms per hectare and fertilization in the vineyard is carried out with only organic substances.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cmeta charset=\"UTF-8\"\u003eAfter being harvested by hand, the grapes are carefully sorted in the cellar by a sorting table. Fermentation then took place at controlled temperatures, with daily pump overs and one délestage carried out in the early stages, all to ensure a gentle extraction. The must was left with the skins for 21 days, followed by spontaneous malolactic fermentation in stainless steel, temperature-controlled tanks. The wine was then aged for 18 months in French oak barriques (25% new). After this barrel ageing, it was further refined in bottle for 24 months before release.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"UTF-8\"\u003e\u003cspan\u003eTenuta Valdipiatta, in the heart of the Vino Nobile zone, is run by Miriam Caporali, who took over from her father, Giulio Caporali, in 2002. Giulio originally purchased the Montepulciano estate at the end of the 1980s.
