The Valtuille de Abajo plot sits on sandy soils which encourage the vines to lay down deep roots. The Cacabelos plot has a higher limestone content and produces grapes characterised by a marked minerality and freshness. The vineyards are farmed following organic and sustainable practices and all of the fruit is harvested by hand.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cmeta charset=\"UTF-8\"\u003eUpon arrival at the winery, the grapes are pressed and left to settle overnight before being racked off the sediment. Fermentation with indigenous yeasts takes place in used French oak foudres (for the Godello) and a 700-litre amphora (for the Doña Blanca).
