The west-facing vines grow on sandy clay-calcareous soils and are trained using the Guyot system on a vertical trellis. The viticulture is of the highest standards, with organically farmed and beautifully tended vineyards. Fermentation takes place in stainless steel tanks (70%) and new French oak barrels (30%). His studies on the chemistry of wine aromatics have been widely published, and he served as president of the International Organisation of Vine and Wine (OIV) between 2021 and 2024. Luigi grew up in a winemaking family in Mondragone, just north of Naples. After his PHD, he spent time in Burgundy in the early nineties doing research into the aromatics of Pinot Noir. On his return, he was appointed Professor of Oenology at the University of Naples.
