Among the oldest Chianti vineyards in the region, the vines have adapted naturally to their environment over nearly a century, with deep root systems thriving in calcareous soils. The narrowly spaced rows, originally designed for horse cultivation, are too tight for machinery, requiring all vineyard work to be carried out by hand.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cmeta charset=\"UTF-8\"\u003eThe grapes were hand-harvested into 16kg crates before being gently destemmed and crushed at the winery. Using gravity flow rather than pumping, the fruit was transferred to small, tulip-shaped, temperature-controlled concrete tanks, with 50% whole bunches retained. Fermentation took place over 10–12 days at temperatures up to 24°C using indigenous yeasts.
