It has a subtle savouriness balanced by notes of cardamom and nutmeg with fresh acidity and a persistent finish.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eGrapes for the Three Lions Shiraz are sourced from 2 subregions within the Great Southern area of western Australia. 85% of the fruit comes from 25+ year-old vertical shoot positioned, cordon spur pruned vines that grow on soils composed of sand, gravel and ironstone. The remaining 15% comes from 20-year-old vines that are planted on deep gravel soils, also vertical shoot positioned and cordon spur pruned to enable easy foliage removal and reduce the risk of disease.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eUpon arrival at the winery, the machine-harvested fruit was destemmed and crushed. Fermentation took place in sealed tanks, with twice daily pump overs. The royal House of Plantagenet ruled England from 1154 to 1485, and centuries later, early English settlers brought the name to the Great Southern, naming the rural shire surrounding Mount Barker after the royal line.
