On the palate, after a broad and silky attack, yellow fruits and brioche notes reinforce the olfactory impression. Then, racy lemon accents (candied lemon, grapefruit, bergamot) weave a spectacular texture, richly layered and refreshing. Aromas of tarte tatin and walnuts, hints of pear and fennel amplify the saline freshness. Following this, 75% of the must undergoes malolatic fermentation before it is all blended.
