They enjoy a Mediterranean climate that is tempered by maritime influences which help to reduce vine stress.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cmeta charset=\"UTF-8\"\u003eThe grapes were picked at the perfect level of maturity and, once at the winery, were macerated on the skins for 15-20 days to extract good levels of colour and flavours. Fermentation took place at controlled temperatures of between 20-23°C, which ensured that there was no over-extraction.
