There is little rain in the summer and the gentle breezes from the lakes and Mediterranean sea lowers evaporation and reduces vine stress.\u003c\/span\u003e\u003c\/span\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-size: 0.875rem;\"\u003e\u003cspan\u003eThe fruit was harvested in the early hours of morning and gently pressed in a pneumatic press under CO2 in order to retain the fresh, primary fruit flavours. The wine was fermented in temperature-controlled stainless steel tanks. After fermentation, the wine was racked off its lees and tartrate stability occurred naturally over the winter.
