The vines are planted on clay and limestone soils. With little rain during the summer months, gentle breezes from both the lagoons and the Mediterranean Sea help to reduce evaporation rates in the vineyard and consequently lower vine stress.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe fruit was gently pressed in a pneumatic press under carbon dioxide to avoid oxidation and retain the fresh, primary fruit flavours, before undergoing skin-contact maceration for several hours. Following maceration, fermentation took place in stainless-steel tanks at a controlled temperatures.
