Both vineyards are south facing providing optimal sun exposure and ensuring that healthy, balanced grapes are picked every year. The `Schloss` Gutswein Riesling, which replaces the previous estate wine `Monopol`, is produced from younger vines, with most of the fruit coming from those planted on red Devonian slate soils in the Herrenberg vineyard. Due to its proximity to the Grüneberg forest, this vineyard is cooler than neighbouring Abtsberg which impairs a herbal and racy core to this wine.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cmeta charset=\"UTF-8\"\u003eThe grapes were harvested by hand and carefully pressed in a pneumatic press. The cellar is situated minutes from the vineyards to ensure quick pressing after harvest, allowing the grapes to retain their aromatics, freshness and complexity. The must was fermented with indigenous yeasts in a Fuder, a classic Mosel 1,000 litre oak cask made from wood from the estate’s own forest by local coopers.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"UTF-8\"\u003e\u003cspan\u003eLocated on steep, south-facing slopes two kilometres from where the river Ruwer meets the Mosel, the estate of Maximin Grünhaus has a history of viticulture that dates back to Roman times. It takes its name from the Abbey of Saint Maximin, a Benedictine monastery which owned the land from the 7th to the 18th century.
