The soil types range in each region from a mix of clay loam and very fine sandy loam in Four Mile Creek and Niagara River to the diverse sedentary soils in the creek shores.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan\u003e\u003cmeta charset=\"UTF-8\"\u003eWith the temperature dropping to –10C the Vidal grapes grown in the Niagara Peninsula were picked and pressed immediately upon arrival at the winery. The viscous juice was allowed to cold settle for three days after which time it was racked clean and inoculated with a specific strain of yeast and was fermented in new French Oak at an average temperature of 15C for 16 days. The wine was allowed to age an additional three months in oak before racking.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cmeta charset=\"UTF-8\"\u003e\u003cspan\u003eThese are the wines that have put Canadian Icewine on the map. Established in 1975 by Austrian chemist Karl Kaiser and Italian-Canadian agriculture graduate Donald Ziraldo, Inniskillin is now synonymous with top-quality Icewine, a fact underlined by the numerous awards they have won. Following Kaiser’s retirement in 2006, Bruce Nicholson joined Inniskillin in Niagara as senior winemaker. Born and raised in the Niagara Peninsula, Bruce sits on the technical committee of the Vintners’ Quality Alliance in Ontario (VQA) and the Committee for Sustainable Winemaking of the Wine Council of Ontario.
