The sandy soils produce wines that are scented and elegant, with aromas developing thanks to the cool nights and long growing season at such an altitude. The vines are trained using the Guyot system, though some older vines are still trained in the traditional \"Alberello di Lamole\" (bush vines).\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAfter handpicking, grapes are sorted at the Fontodi winery, then fermented and macerated in concrete vats with indigenous yeasts. Though the Manetti family has owned Fontodi since 1968, they have lived in Chianti for centuries, producing some of Italy’s finest terracotta at their factory in Ferrone. Giovanni Manetti has run the estate since 1980.
