Fermentation took place in stainless steel tanks followed by around two weeks on skins, which resulted in further structure and tannins. The wine was predominantly aged in stainless steel tanks to preserve the fresh, primary fruit aromas. A small portion was aged in neutral French oak barrels for 12-14 months before bottling, to round out the tannins.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eFog Mountain pays homage to the mountain ranges and their cooling fogs, which have a considerable influence on Californian viticulture. These mountains offer unique climatic conditions and varied soils on which to plant vines. At the same time, the fogs create the ideal microclimate, prolonging the growing season and allowing the grapes to ripen fully.
