Domaine Tollot-Beaut owns six hectares of vineyards in Chorey-lès-Beaune, planted on a mixture of limestone, gravel and clay soils at the bottom of the slope of Aloxe-Corton. Fruit for their Chorey-lès-Beaune is sourced from three different plots. The first is located on the southern side of the village and produces perfumed fruit with a fresh, bright cherry character and is always the first parcel to be harvested. The second is located on the northern side and produces darker, more powerful fruit with firmer tannins. The third is situated in the centre of the village and planted on mainly clay soil. It produces low yields of fruit with concentrated flavour profiles. The vines are all south facing and Guyot trained.
Domaine Tollot-Beaut, in Chorey-lès-Beaune, was founded in 1880 by François Tollot and is now run by the family’s fifth generation, Nathalie Tollot and her two cousins, Olivier and Jean-Paul. Domaine Tollot-Beaut is famed for being among the first producers in the Côte d’Or to start domaine bottling in 1921.
