The palate is smooth and rounded with flavours of stone fruit and honey-like texture. The distinctive clay and chalk soils give extra power and richness to the otherwise elegant, aromatic palate. The white-chalk pebbles absorb sun during the day and reflect it during the night to extend ripening.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eUpon arrival at the winery, the grapes were gently pressed in a penumatic press. The fermentation took place in temperature-controlled stainless-steel vats, using only indigenous yeasts. The wine went through malolactic conversion before ageing on fine lees for 12 months in tank, adding complexity and texture to the wine.
