The vines are on average 25 years old and are planted on a mixture of limestone, clay, loam and flint. The clay soils give extra power and richness to the otherwise elegant, aromatic palate. The white-chalk pebbles absorb the sun during the day, and reflect it back to the vines during the night to extend ripening and, with the flint, impart a distinctive minerality. The grapes were machine harvested in the cool temperatures of the early morning to retain the fresh fruit flavours.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"MuiTypography-root accordion_paragraphSection__v26kt MuiTypography-body1\"\u003e\u003cspan\u003eUpon arrival at the winery, the grapes were gently pressed in a penumatic press. Each parcel is vinified separately, the fermentation took place in temperature-controlled stainless-steel vats, using only indigenous yeasts. The wine went through malolactic conversion before ageing on fine lees for around ten months in tank, adding complexity and texture to the wine. The wine was lightly filtered before bottling.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"MuiTypography-root accordion_paragraphSection__v26kt MuiTypography-body1\"\u003eIn 2005, a 24-year-old Jean-Christophe Perraud founded Domaine Perraud and began making wine from his family's vineyards in and around Mâcon and Saint-Véran. Until then, the family had sold their fruit from these 30-hectares of vines to local co-operatives.
