The domaine buys must from a long-established grower and ferment the wines at the estate in Pommard.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cmeta charset=\"UTF-8\"\u003eThe grapes were hand picked and transported to the winery, where they were whole bunch pressed ensuring lower levels of oxidation and contributing to creating a smoother mouth feel. The juice was then fermented in 350 litre oak barrels, 25% of which new oak. Malolactic fermentation took place and the wine aged on fine lees for 11 months with regular bâtonnage, every 7 to 10 days, adding body and complexity of aromas to the wine. Finally, the wine was filtered and bottled at the estate.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"UTF-8\"\u003e\u003cspan\u003ePreviously winemaker for Olivier Leflaive, Jean-Marc Boillot founded his eponymous domaine in 1985 after renting vines in Pommard and Volnay. In 1988, he inherited more vines in both appellations from his grandfather and two years later, a third of Domaine Etienne Sauzet, in Puligny-Montrachet, was left to him by his grandmother. This bequest of land is rare in Burgundy but explains why Domaine Jean-Marc Boillot has acquired such a respected reputation in just under four decades.
