Natural grass cover is used to strengthen soil diversity and water retention, and the soils are worked by horse to avoid compaction. The Aligoté is sourced from few different parcels situated in Marsannay-la-Côte (Es Barres), Fixin, Morey Saint-Denis (Les Champs de Vignes) and Savigny lès Beaune (Aux Boutières). Soils are tilled and cover crop is left during summer.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eUpon arrival at the winery, the grapes are pressed for 3 to 5 hours, the juice is then left to settle for 12 to 24 hours. Fermentation takes place naturally in stainless steel vats.
