The nose is delicate, dominated by violets, simmered cherries and notes of allspice. The palate starts fresh, then develops into a smooth texture, followed by tight tannins and supported by a long and fresh finish.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"UTF-8\"\u003e\u003cspan\u003eJulien has 26 hectares of vines, which are up to 100 years old and lie at the foot of the Dentelles de Montmirail. This cuvée is made from Grenache, Syrah, Mourvèdre, Cinsault and Clairette grown exclusively on the high-altitude limestone marl surrounding les Bosquets.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003ePlots are vinified separately with partial whole bunch fermentation, the grapes are gently crushed and then transferred into the vat using gravity. Low extraction at the start of fermentation, followed by daily manual punching down. Ageing is done separately for the first 12 months using 228l barriques for Syrah and a mix of 400l, 500l and 600l oak barrels for the rest.
