Large diurnal range exists in the vineyard creating excellent conditions for growing ripe concentrated grapes with high natural acidity, the vineyards are protected from the cool Pacific air by the coastal mountains. It was then fermented with selected yeasts at 16-18 ºC in temperature controlled, stainless steel tanks.
