The south-facing slopes lie on distinctive gneiss and shist soils, which give a particularly racy, fragrant style of Muscadet. Unusually for an area dominated by the négociants, Château du Coing is family-run and uses only estate-grown fruit since 2010. They began the conversion to organic farming in 2021.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cmeta charset=\"UTF-8\"\u003eThe grapes were gently pressed using a pneumatic press. Fermentation took place in underground stainless steel tanks at 20°C over two to three weeks. After fermentation, the wine was matured on lees in tank before bottling. Véronique Günther-Chéreau is the current generation producing wine at the estate, which has been in her family since 1421. Véronique grew up at Château du Coing de St. Fiacre, and after achieving a doctorate in pharmacy, she returned to take the reins in 1990. In 2011, she was joined by her daughter Aurore after she completed her biology and oenology studies in Dijon. Unusually for an area dominated by négociants, Château du Coing de St. Fiacre uses only estate-grown fruit sourced from its 40 hectares of Melon de Bourgogne vines.
