The vines, planted at 350 metres above sea level, are aged between 40 and 45 years. The grapes were 100% destemmed and vinified in concrete vats. Fermentation proceeded at a moderate pace between 22 and 28°C with one pump over per day and maceration for 12 to 18 days.
