The nose is intense with ripe quince, and caramelised pear aromas. Cave de Hunawihr’s fruit is sourced from 36 hectares of 25-year-old vineyards running along the south and south-east facing hillside slopes around the village, at an elevation of 250-320 metres. Temperature-controlled fermentation took place between 16-18°C for three weeks, followed by four to six months on fine lees in stainless-steel tanks to settle before being filtered carefully. Today, Hunawihr has grown to 110 members and is equipped with a renovated winery and 200 hectares of vineyards, 80% of which are situated in Hunawihr and its surroundings, Riquewihr and Zellenberg.
