On the palate it is delicate, mineral and full-bodied, with a pleasant and persistent finish.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe vineyards extend across the villages of Custoza, Sommacampagna, and Valeggio sul Mincio, situated just south-east of Lake Garda. The vines are trained using the traditional Pergola Veronese system and planted on morainic hills, where soils are predominantly calcareous, with gravel, sand, and pebbles. The principal grape varieties cultivated here are Garganega, Trebbiano Toscano, Fernanda, and Incrocio Manzoni.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cmeta charset=\"UTF-8\"\u003eAll grape varieties were picked, destemmed, and crushed separately. After a cold maceration on the skins, the grapes were soft pressed, then fermented and aged at controlled temperatures of around 15-18°C in stainless steel tanks.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe Cantina di Custoza cooperative, southeast of Lake Garda, was founded in 1968 and now comprises 200 members farming over 1,000 hectares of vineyard. The small village of Custoza shares its name with an appellation in the southwest of the Province of Verona. Matt Thomson of Blank Canvas worked here in the late 1990s. His influence is still felt at the winery, as local winemaker Luca Oliosi now oversees some of the processes he introduced.
