The 61-year-old bush vines grow on schist soils and produce low yields of grapes packed full of flavour.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe grapes for this wine were carefully hand harvested. Upon arrival at the winery, the grapes were sorted by hand prior to destemming. Fermentation with gentle extraction techniques took place in stainless steel tanks and the wine was then aged for 12 months in neutral fibreglass tanks before bottling.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"UTF-8\"\u003e\u003cspan\u003eAs the co-founder of St. John, one of the world's most influential restaurants, Trevor Gulliver is a man of many enthusiasms. The house he bought in Minervois was intended as a place to unwind, but instead, Trevor saw an opportunity to exercise his natural curiosity and make some excellent wine. This decision was further cemented by the input of a talented local vigneron, who had just returned from running Michel Chapoutier’s Australian operations. The resulting project was named Boulevard Napoléon, after the street on which the house and winery are situated, in the village of La Livinière.
