On the palate it is fresh and vibrant, showing juicy red and black fruit framed by lively acidity and fine-grained tannins.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe old, bush-vine Monastrell vineyards are located around the Alicante villages of Villena and Monovar. The vineyards sit at 500 to 700 metres above sea level and cool nights at this elevation counteract the heat of the days and allow the grapes to undergo a perfectly paced slow ripening. Soils are calcareous and sandy loam with rounded pebbles on the surface and impart a marked minerality on the wine. The vineyards are farmed organically and all of the fruit from the low-yielding bush vines is harvested by hand.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eUpon arrival at the winery, the hand-harvested Monastrell was destemmed and crushed. Fermentation with indigenous yeasts took place in stainless steel tanks with gentle pump overs and punch downs to extract optimum levels of tannin, colour and flavour.
